checked. sweet knife anon. what's your opinion on chinese cleavers? i got one for free and didn't love it at first but now it's all i use

and, i know this might sound dumb but if you want to get a head start on cooking, you could try getting a part time job as a line cook at a decent restaurant (not a chain restaurant but not fine dining either- something where entrees cost like $20, like a fancy bar and grill type spot).

they will start you on prep to practice knife skills and then every month or so after you get good at the other thing, they'll train you on different stations increasing in difficulty/complexity and you'll learn how to do the things.

actually no, that is horrible advice lmao i take that back. working in kitchens sucks, you will hate your life.
