Electrical engineering got me ~96k in an incredibly cheap state (embedded roles were 100k+ but they were in places like Seattle). Computer engineering is great as well if the school offers it, but for digital hardware it's generally interchangeable with an EE degree and relevant minor.

Avoid power engineering as it pays dogshit, which is odd because it required an intense amount of knowledge in electromagnetics / applied physics and wrecked everyone's GPA or pushed them into drinking.
