If I were recommending anime to somebody who doesn't watch anime I would go with mainstays like Eva or Berserk. If they like cute shit K-on or CCS, if they like fighting then Toriko or HxH. If they want something more abstract my personal favorite is monogatari series (I used the novels to learn Japanese). I would also reccomend any of the avant-garde mainstays like Lain or Key:the metal Idol. If they want something flashy and badass anything Trigger but in particular Gurren Lagann. If they want fan service then To Love Ru. I could go on but you get the idea.
