it depends on the simulation.
obviously some physics simulations, you can reliably approximate dynamical system kinematics over arbitrarily long time periods. others we have problems simulating extremely short time periods, because we don't know what happens

OK, I'll try and be more straightforward:
In your hypothetical game, is it:
1. there is a simulated market, with simulated order books and the "players" are the only ones that interact with those order books?
2. the market simulation states are "fixed" and based on external price histories, and players orders don't effect the book?
3. some other choice?

I'll explain the problems with simulating either of those if you want. #1 is the only game-like one, but it also has issues (fun issues) setting up a working market place. Most "rules" and initial conditions that you set up will lead to a very non-market looking situation later in the simulation. that's how these things usually run
