The whole appeal of something like first class is for people in the middle class income bracket to get a little taste for the lifestyle of someone far richer (experience of flying on a private plane). Truly wealthy people fly in private jets or charter. The decline of the middle class and as well as living standards has now lowered demand for it and that's why it's being phased out. The boomers just happened to around to enjoy that period. We'll never experience since we're living through a period of generational decline.

Boomers that flew in the lower classes (around 40-50 years ago) had a very different experience than today. Picture is from a flight in the 1970s. Look at how much legroom and space there is. Two less seats per row, an extra window. Complementary campaign in a crystal class. Eating real food with real cutlery. Modern air travel is like travelling in a cattle car by comparison and the opportunity for ordinary people to experience anything different is slowly slipping away.
